This is a spin off of my cauliflower soup recipe, omitting the fluffy white cauliflower florets for their humble cousin, the vibrantly green broccoli.
It’s a great way to get your greens in when it’s cold and your favorite salads and green smoothie recipes (despite their deliciousness) sound unappealingly chilly.
Enter Shrek soup (or if you don’t have kids; creamy broccoli soup)
The Creamy Green One That Likes To Be Called Shrek
- 1 cup broccoli florets, chopped
- 1 large brown onion, diced
- 1-2 large garlic cloves
- 1/2 cup rich, fatty broth (or milder broth with fat such as tallow, butter or ghee added back in for flavour, texture and nutrition)
Method
Saute the onion and garlic in a small saucepan with butter, ghee or tallow (basically your favourite healthy animal fat) until golden and aromatic. Add broccoli and and broth and bring to the boil.
Reduce heat and simmer with lid on for 10 minutes or until broccoli is tender. After 10 minutes, remove lid and let the soup reduce until most (but not absolutely all) liquid is absorbed.
Transfer the lot to a high speed blender or food processor and blend until you have a thick, green puree.
Serve on its own, with bread and avocado, as a ‘mash’ with meat and steamed veggies. Whatever; this soup is your oyster.
