Leftover Lamb Leg & Gravy

If a sweet little lamb is going to be sacrificed for human nourishment, then it’s only fair that not one remnant of that baby sheep goes to waste.

Though  this incredible soup is one option, you aren’t always going to feel like soup. That’s where this nifty recipe comes in . Instead of a traditional broth, you’ll make a “reduced” broth that renders the meat tender ‘fall-of-the-bone-ish’ and forms the base of a homemade gravy.

Leftover Lamb Leg & Gravy


  • The leg bone from a lamb roast
  • Pre-carved meat that was too tough to serve, such as the gelatinous parts that hadn’t quite softened
  • Filtered Water to cover the leg/meat
  • 3 Tablespoons of banana flour
  • 1 teaspoon seaweed salt (or celtic sea salt or Himalayan salt)
  • 1 teaspoon dulse flakes (optional)
  • Dried organic herbs of choice
  • If you have it, add any leftover gravy from the Sunday night, which was just banana flour and pan juices mixed together in a saucepan over a low heat until thickened
  • Roasted and/or steamed veggies, to serve

Method

Place water, bone and meat into a large saucepan and bring to the boil. Boil uncovered until water has reduced by three quarters, so you’re left with only 1 cup of liquid.

At this point, take the bone out of broth to cool on a plate or chopping board. Once cool enough to handle, strip the excess meat/fat/marrow/connective tissue from the bone.

Dice this meat/connective tissue up and set aside.

Discard bone, it has now fulfilled it’s purpose.

Add the remaining ingredients to your broth and bring it back to the boil, whisking constantly until smooth and slightly thickened. Add the reserved meat back to the pan and stir to coat with the rich sauce.

Transfer to a large (or two smaller) glass containers and refrigerate overnight or until completely chilled and gravy is thick, like a jelly.

Reheat on the stovetop before serving with veggies of choice.

Enjoy this soothing, melt-in-the-mouth creation, feeling proud that not one part of Mary’s Little Lamb went to waste.

    Rachel, I meant to ask you, have you thought of doing a post/podcast(with your Mum again would awesome)/email about what you feed your animals? I heard a really interesting interview, think it may have been one of Brett Hill’s about making your own dog food, but I would be really, really keen to hear what you feed you lovely furry ones. I am wanting to get a cat again soon (my baby died 18months ago 🙁 ) and as she died of pancreatitis I am really, really keen to find out what I can feed my next love so that I know I am giving them the best I possibly can to keep them healthy and free of any additive, vegetables and fillers(usually grains, wtf!). Just a thought, otherwise any tips you can give me would be so appreciated. I was thinking plain broths cooked without veg and then just adding in a bit of different protein each meal. Being in Adelaide I have easy access to fresh fish, kangaroo, organic lamb, chicken and pork. But beyond that I can’t think what else to do. I can get organic chicken wings and necks from Pasadena easily too if our new kitty will go for them and hasn’t already got bad habits and a junk food addiction from their previous life (we will be getting a rescue kitty).

    Also I was just at Cheap as Chips and saw a poo emoji cushion and thought of you. Wish I knew where to send it to as a Christmas pressie for you.

    1. Oh Crystal your warm feedback has made my day! That’s so funny mum and I are planning on sitting down and doing a podcast on animals when she finishes work for the year. It was going to be about animal righs and ethical eating (not having to go vegan but eat less of the quality animal products etc.) but I think that we could easily weave our experiences with let care in there too!
