Oh. Moi. Gawsh. I am bursting with enthusiasm to share this weeks guest. In fact, I am this close to wetting my pants. Lols was my very first role model in the world of food and is most definitely the ‘Steve Irwin’ of fruits and veggies. She has written three beautiful books; Inspiring ingredients, The 20/20 Diet and The 20/20 Diet Cookbook (and she has a fourth book on the way in 2015 -yes!)

Where did your open-minded adventure begin? Was there a significant event that shifted you into gear, or did your outlook on life simply shift over time?
I feel like there was no specific point. I think life’s just about being real and doing what you love. Simple.
What drives your enthusiasm for self-care and optimism?
I do what feels right, in my heart, I back myself and trust that. Took a long time to get to this point but now I just know in my heart that I’m on the right path.
What keeps you goofy and ‘down to earth’?
I keep real souls around me, Dad and my best friend Linda both pull me into line whenever I need it, which isn’t too often but I do need it from time to time. I get caught up in things if I stress out.
How do you keep exercise FUN?
Yoga, running, walking and weights – love it all!
When it comes to nutrition, what is your philosophy?
Eat real food; share food with the people you love and nourish yourself.
How do you overcome limiting thoughts and rationalise negativity?
I trust that things happen for a reason and try to find the lesson in it.

LAVENDER BLUEBERRY SMOOTHIE
I know this one sounds really fancy pants, but it looks so pretty and tastes unreal so I had to share it with you! You just need to get your hands of dried lavender, but make sure it’s food grade, I generally buy it as an organic tea, it looks just like dried lavender, it’s not blended with anything. Now lavander is much more than a pretty flower, it works wonders on our nervous system, it’s so calming, is sometimes used to treat insomnia and it event has a mild antidepressant effect, so this creation is pretty and powerful!
Serves 2
- 300 g (2 cups) blueberries, fresh or frozen
- 2 tablespoons chia seeds
- 80 g (1/2 cup) macadamia nuts
- 2 tablespoons coconut nectar
- 2 tablespoons coconut oil
- 500 ml (2 cups) coconut water
- 1 teaspoon of chia seeds, to serve
- pinch of dried lavender (I buy it in loose leaf tea form)
Place blueberries, chia seeds, macadamias, coconut nectar, coconut oil and coconut oil in your blender and process until creamy smooth. Pour into tall glasses and top with half of the extra chia seeds and a pinch of lavender tea.
