Medicinal Marrow Muffins

Is it just me or is Monday the perfect day to get your procrasti-bake on? I’m on swot-vac and with my next exam not until next Friday I’m not feeling much urgency yet. There is no guilt in leaving the books for a little while and following my instincts in the kitchen – my own personal form of therapy (that and barefoot beach walks).

The other day I had the idea to make a muffin recipe that included bone marrow (after this bone marrow custard recipe went down a treat with my family).

A Pancake Miracle

Yesterday a miracle occurred in my kitchen. You see, for years I’ve been trying to perfect gluten free crepes for mum and I keep falling short. Most gluten free pancake recipes are thick and fluffy, as they are easier to flip and if you do find crepe-style instructions, they use buckwheat flour (mum doesn’t like this) or conventional pre-mixed GF flours (full of refined ingredients and usually additives too!).

This is comfort food taken to the next level A delicious recipe that fits in nicely with a ketogenic diet, GAPS (stage 4 I believe), grain-free, paleo, sugar-free, dairy-free (well, it uses ghee but lots of dairy-free peeps don’t react to ghee as it is pure butter fat; minimal lactose or casein. You could always use coconut oil, tallow, lard, chicken or duck fat), soy-free, nut-free, egg-free. Have I missed anything?

This cauliflower rice is ready in under 10 mins, uses regular, non-exotic ingredients (so probably won’t require any complicated shopping trips – handy at this time of year) and is (wait for it) gluten, dairy, nut, sugar, soy, egg, legume and starch free, suitable for paleo, GAPS, SCD, vegan, vegetarian and ketogenic diets to boot.

Probiotic Power Choccie Smoothie

This Smoothie is made on a base of homemade Kultured Wellness coconut yoghurt. I am a sucker for shop bought coconut yoghurts, but it sure is cheaper to purchase the starter culture and make your own from scratch. Do I always make my own? No. Honestly, I still prefer the taste and consistency of a good Coyo (or equivalent), but when I’m feeling thrifty, the homemade variety does the job.
