I’m stoked to share these cakes with you. A lot of my recipes are “nice” and I really like them, but they aren’t all cookbook worthy. Some of my cakes lack the “perfect” consistency. I’m weird and enjoy denser consistencies because they’re richer. Some of my mains are just so super-simple they don’t really qualify as a recipe. Serving suggestion perhaps? My basics are just that; broths, fermented veg, yoghurt, nut butter etc. it’s virtually a universal method, I can’t take much credit for their invention, apart from perhaps a few unique flares here and there. If I was on the 2017 season of MKR, Amy and Tyson would be dropping “average-bombs” all over the place.

Jaffa Swirl Loaf

Vanilla Patty Cakes
There’s something nostalgically comforting about baking cupcakes. For me, this nostalgia stems from memories of baking them with mum in kindy and primary school (okay, she did most of the baking, but I was a dedicated bowl, beater and spoon cleaner … okay, uncooked batter eater).
Sweet Spud Pancakes
The more I bake without flour, the more I realise I don’t even need it. Some of my most fail-proof recipes such as GAPS muffins and Chocolate-Hazelnut Cupcakes don’t use flour and are quick and easy to make. I guess that’s because gluten-free flour combining can be tricky business. Don’t get me wrong, there’s plenty of ace recipes out there calling for wheat flour alternatives such as cassava flour, coconut flour, banana flour and rice flour, it’s just you really have to get your ratios on point (and that often involves measuring scales … something I don’t have in my kitchen).

These are similar to these cupcakes but with less sweetener so for those of you that like to keep sugars low, they are more of a “everyday” cupcake recipe that can be whipped up at the beginning of the week for lunch boxes or as a easy-to-grab snack if you work from home (they’d even make a great breakfast on the go).
